What is sourdough?
It is a traditional bread making technique that dates back to ancient Egypt. The bread is naturally leavened with natural microorganisms (wild yeast) rather than commercial yeast. Sourdough is effectively a naturally fermented food, the probiotics benefit your gut.
With our long fermentation process (48 hours), most people (non-coeliac) find it very easy to digest. Furthermore, the lactic acid naturally produced in sourdough decreases phytic acid which in turn improves the body’s ability to absorb nutrients. Sourdough (including white) is naturally lower GI compared to commercial bread due to the natural acidity.
There are no preservatives, just natural ingredients. And as the name suggests, there is a natural mild sour flavour, delicious.
What is the best way to store my bread?
Storage depends on the product however our breads are best stored in a paper bag or cloth bread bag for extra protection. A compostable plastic bread bag also helps keep your bread fresh and is used for sliced bread. We don't recommend storing your bread in the fridge as this will dry it out very quickly.
Can I freeze my bread and bagels?
Yes, we recommend freezing when it is fresh on the same day as you purchase the bread. Bagels will freeze very well but we do not recommend freezing pastry products as they are more fragile.
Do you slice bread?
Yes, we offer sliced bread in a toast or sandwich thickness however we always suggest buying a whole loaf and slicing yourself to get the most out of your bread.
Why is your crust so dark?
Our signature dark crust is a result of the long fermentation process and the natural sugars caramelising. The darker crust produces a richer flavour and also adds to the chewy texture, a nice contrast to the moist crumb.
The industrialisation of bread has favoured paler blond loaves. Historically, pre-industrialisation, darker loaves were favoured.

Can I place an order for same day collection?
No, at this stage, unfortunately we cannot process same day collection. We have plenty of bread and pastries for walk-in sales.

No problem, we will hold your order until the venue closes.
How far in advance can I order?
Orders open up 10 days in advance.

We sell e-gift cards online and physical gift cards in store. These can be used across all store locations, Melbourne and Sydney.
